Gluten free refined sugar free cinnamon rolls
Ingredients
• 2 cups gluten-free flour
• 1 tbsp baking powder
• ½ tsp salt
• 2 tbsp coconut sugar
• ½ cup cold butter, cubed
• ¾ cup milk (or almond milk)
• 1 egg
• 1 tsp vanilla
Make the dough
1. Heat oven to 375°F
2. Whisk flour, baking powder, salt, coconut sugar
3. Cut in cold butter until crumbly
4. Whisk milk, egg, vanilla → stir in
5. Gently form soft dough
Filling
• ¼ cup melted butter
• ⅓ cup coconut sugar
• 1½ tbsp cinnamon
• Pinch salt
Roll dough into rectangle, brush butter, sprinkle filling, roll up, slice.
Bake
Place in buttered dish.
Bake 22–25 minutes until golden and fluffy.
Cream Cheese Coconut Sugar Icing
• 4 oz cream cheese, soft
• 2 tbsp butter, soft
• ⅓ cup powdered coconut sugar
(blend coconut sugar until powdery)
• 1 tsp vanilla
• 1–2 tbsp milk
Whisk until silky. Spread warm rolls.
